Sheet Pan Chicken & Acorn Squash

Because sometimes I just don't feel like doing dishes
2 Servings

Ingredients:
1 lb chicken breast
1 acorn squash, sliced in half moons about a half inch thick
4 strips of bacon, plus rendered fat
3 tbsp brown sugar, divided
2 tbsp butter, melted
2 tsp paprika
2 tsp cinnamon
2 tsp garlic powder
Salt & Pepper
Directions:
Preheat oven to 400*F
Lay bacon strips on sheet pan. Season with a sprinkling of 1 tbsp brown sugar, dash of paprika, dash of cinnamon, and dash of garlic powder (this is a quick, easy way to make candied bacon!). Bake for about 10 minutes, or until bacon is crispy and fat is rendered. Put bacon aside to cool.
While the bacon cooks, mix melted butter, 2 tbsp brown sugar, 2 tsp paprika, 2 tsp cinnamon, and 2 tsp garlic powder. Adjust seasoning to your taste as needed.
Add bacon grease to bowl of mixed butter and seasoning. Whisk to combine. Toss acorn squash and chicken in the bacon grease and butter mixture. Season everything with salt & pepper to taste.
Place acorn squash and chicken on sheet pan in a single layer. Cover chicken with any remaining sauce.
Bake at 400*F for about 35 minutes, or until chicken is cooked. You should smell the cinnamon and brown sugar as it bakes!
Remove from oven and let chicken rest. Slice chicken and divide acorn squash between two dishes. Break bacon into pieces and divide between the plates. Top chicken with any remaining pan drippings.
