Easy Weeknight Meal: Pork Chops with Kale Apple Salad

Ingredients:
2 boneless pork chops, seasoned with salt, pepper, ground mustard, garlic powder, cayenne pepper, and ground ginger (you can get creative here and use what you have in your spice cabinet!)
Bunch of kale, chopped into bite-sized pieces
2 apples (we used pink lady and NZ queen apples), chopped
Half bunch of curly endive
Olive oil
Salad Dressing Ingredients:
1 lemon, juiced
2 tbsp olive oil
1 tbsp finely chopped cilantro
2 tsp mustard
2 tsp honey
Salt & pepper to taste
Pork Chops Sauce:
Half lemon, juiced
1 tbsp olive oil
1 tbsp finely chopped cilantro
1 jalapeno, minced
2 tsp mustard
Salt & pepper to taste
Directions:
This recipe couldn't be any easier! For the salad dressing, simply combine all ingredients. Same goes for the pork chop sauce! You can prep these in advance and store in the fridge.
For the pork chops: Heat pan on medium-high heat. Drizzle with olive oil. Add pork chops and sear for 4-5 minutes per side (depending on the thickness of your pork chops), until internal temperature reaches 165*F. Let pork rest for 5 minutes, then thinly slice and top with sauce.
For the salad: Combine kale, curly endive, and apples in a bowl. Toss with salad dressing and serve.
