Patty Melts

2 Servings

Ingredients:
.75 lb ground beef
4 slices of bread
4 bacon strips, cooked
1 onion, thinly sliced
2 tbsp butter
Sharp cheddar
Onion rings (optional - we had leftovers!)
Secret sauce (mayo, mustard, sriracha)
Mayo (for cooking)
Directions:
Caramelize the onions - Melt butter in a small sauce pan on low heat. Add in sliced onion and season with salt & pepper. Stir occasionally. Cook for about 30 minutes. Low & slow!
While the onions cook, divide ground beef in half and make patties in the shape of your bread. Season both sides with salt & pepper.
Heat pan on medium-high and add a small amount of olive oil. Sear patty until cooked (about 2 minutes per side, depending on the thickness of your patty and your desired doneness. We prefer medium-rare).
Prep your patty melts! Spread a thin layer of mayo on a slice of bread, and put it mayo-side-down on a cutting board. Top with layer of cheese, cooked patty, caramelized onions, cooked bacon and more cheese (and cooked onion rings if you are using!). Add secret sauce to other slice of bread and top the patty. Spread mayo on top of the bread (both sides of the sandwich should have a thin layer of mayo for cooking!).
Heat pan on medium. No need to add olive oil. Put patty melt into the pan, cover, and cook. Flip patty and continue cooking until cheese is melted and bread is toasted.
Serve with Crispy Oven-Baked Fries!
