One Pot Meal: Cabbage & Kielbasa

Easy, flavorful, filling, and low-carb! This simple dish is something we make at least twice a month. And it's great leftover -- All you need is one big batch and you have lunch for the rest of the week!

8 Servings
Ingredients:
1 head of green cabbage, thinly sliced (you can use any kind, we've made this with red cabbage as well)
2 packages of kielbasa, thinly sliced on an angle (any kind will do, change it up to make different variations of this recipe!)
6 strips of bacon, sliced into small pieces
1 yellow onion, sliced
2 jalapeños, small diced (or any pepper you prefer. optional.)
1/4 cup diced dill pickles
Salt & pepper to taste
Olive oil
Vinaigrette Ingredients:
1/4 c. Dill pickle juice
1/4 c. Olive oil
1 tbsp spicy mustard
Salt & pepper to taste
Directions:
1. Brown the kielbasa: Heat a large pot on medium-high. Coat with olive oil and add in kielbasa. Cook until browned and remove from pot. Set aside.

2. In the same pot, add sliced bacon on medium-high and render fat.
Once bacon fat has rendered, add sliced onions, diced jalapeños, and diced pickles. Cook for about 7 minutes, or until onions have softened.

3. Add in your cabbage: Stir to combine all ingredients in the pot. Cover and cook, stirring occasionally, until cabbage has softened (about 8 minutes).

4. Make your vinaigrette: While the cabbage cooks, whisk all vinaigrette ingredients until combined.

5. Mix it all together: Once the cabbage has cooked, add browned kielbasa & vinaigrette to the pot. Stir to combine.

6. That's it! Store leftovers in an airtight container in the fridge for up to 5 days. Enjoy!
Pro tip: Sprinkle with red pepper flakes to make it a little spicy!
