Potato Pizza with Chorizo

Ingredients:
Pizza-
1 store bought pizza dough (we used Pillsbury pizza dough)
7 small yellow potatoes
1 package of chorizo
2 c. shredded Mexican cheese
Sauce-
1 c. milk
1 tbsp butter
2-3 tsp flour Dash of cayenne pepper
Dash of smoked paprika
Dash of chili powder
Dash of mustard powder
Salt & Pepper

Directions:
1. Preheat oven to 425 (F)
2. Slice the potatoes about a half inch thick and small dice the chorizo
3. Par-boil the potatoes to partially cook them, then pan sear to get them crispy (alternatively, you can pre-roast the potatoes, but boiling then searing gets the best texture!)
4. Start making the sauce! Melt down butter and whisk in flour to create a rue. Slowly add in milk and season.
5. While the sauce renders, pre-bake the dough partially for around 8 minutes or according to package directions
6. Top the dough with sauce, layer in potatoes and chorizo, and top with shredded cheese.
7. Bake for an additional 10 minutes, or until crust is golden and cheese is melted.
